Ingredients
3 courgettes, grated
2 spring onions, thinly sliced
1 handful of fresh dill, mint and
Parsley
150g white cheese
2 eggs
100g flour
1 teaspoon of baking powder
Salt
Freshly ground black pepper
Vegetable oil to fry
Cooking instructions
Season the grated courgettes and set a side. Chop the fresh herbs finely and mix with crumbled white cheese and spring onions. Salt will make the juice from the courgettes to come out. Drain the courgette juice and add them into the cheese mixture.
Mix in the eggs, the flour, and the baking powder. Heat the vegetable oil to 170ºC and spoon the mixture in to the hot oil. Fry until golden brown.
